First you make really thin crepes, add a thick layer of whipped cream and chunks of fresh mango and you fold them like a burrito.

Mango crepe rolls
Mango crepe rolls are surprisingly easy to make and they don’t take a lot of time. They are perfect for summer because this dessert is mostly fresh mango which is really refreshing. You can also change the mango for your favorite fruits, strawberries, raspberries, peach…
This recipe will give you 6 crepes but the first two you make are always a little ugly so you have to eat them and then i used 3 crepes to make the crepe roll so you can eat the other one or make the crepe roll with 4 crepes:)
Ingredients

- eggs
- milk
- all purpose flour
- powdered sugar
- melted butter

Ingredients
eggs, use room temperature eggs.
milk, it has to be full fat milk, make sure its not too cold or it will solidify the butter
all purpose flour, normal flour for all uses.
powdered sugar, its better to use powdered sugar or also known as icing sugar because it’s thinner and you wont have to deal with sugar crystals in the batter. We are also using the sugar on the whipping cream.
Butter, make sure its melted, not cold, not soft. Fully melted in the microwave or in a pan in the stove.
Heavy whipping cream, make sure it’s 35 % fat whipping cream, it has to be really cold so it holds its structure perfectly.
fresh mangoes, use fresh and ripe mangoes but if you can’t find them where you live or they are too expensive you an also use frozen mangoes or the canned ones.
tips
- Make sure the ingredients are not too cold, i made the mistake of using really cold milk and when i mixed it with the melted butter, the butter solidified and it was so much extra work too fix it.
if this happens to you here is how i fixed it, pour the batter into a sieve with a bowl under it and move without using a spoon, then in the sieve you will have the butter, wash it with really cold water so it doesn’t melt and then wait a little to mix it again with the rest of ingredients. Once you feel like the batter is not that cold melt the butter again and mix it.
- Use a non stick pan to cook the crepes.
- using a ladle pour in the batter and move the pan so the batter covers it completely.
- make sure to make the crepes really thin.
- cook them only on one side on really low heat.
- you will know the crepe is cooked because they are really easy to remove from the pan with a spatula.
- let them cool down before adding the whipped cream or it will melt.

how to make it
first we start by making the crepe batter, making sure all the ingredients we are using are not too cold and melting the butter completely.
Using a non stick pan we cook them, only for one side on really low heat and then we let them cool down before adding the whipped cream.
Make whipped cream using really cold heavy cream making sure its 35% fat and powdered sugar, it takes 3 minutes to make in a stand mixer with the whisk hook attachment. Spread the whipped cream into the crepes and add chunks of mangoes on top and roll them like a burrito.

1)First step, dry ingredients
To make the crepe batter we start by mixing all purpose flour and powdered sugar,

Crack two eggs into a separate bowl and then add them into the flour, add 1/2 of the milk and then mix with a wish making sure it doesn’t have any lumps. Make sure to scrape the sides and the bottom. You should have a thick batter similar to the pancake batter.
Using only half of the milk and mixing helps you to not have any unnecessary lumps in the batter.
3)Third step, milk
Now you can add the rest of the milk, and the batter should be really liquid now.
4)Forth step, butter
microwave the butter for about 30 seconds or until it’s fully melted and add it into the crepe batter, then mix it until it becomes really smooth.

5)Fifth step, cook
add some butter into a non stick pan and then with a paper spread it all over the pan. Once its hot enough pour in some crepe batter and move the pan around so the batter covers the bottom of the pan completely, make sure you are cooking them on low heat and only cook them on one side.
6)Sixth step, whipped cream
now you have your crepes ready and you can start by making the whipped cream.
Pour really cold whipping cream and powdered sugar in the stand mixer bowl using the whisk hook attachment on medium high speed it should take you about 3 minutes. Beat until stiff peaks are achieved when you lift the whisk and the cream holds its shape without collapsing.
peel and chop the mango into small squares.
BUILD THE CREPE ROLL
7)Seventh step, crepe
- Lay the crepes on a flat surface slightly overlapping each other. The side of the crepes with color or pattern should be facing you.
- add whipped cream and spread it like a rectangle like you see on the picture, add the chopped mango on top.
- now fold the sides towards the center creating a rectangular shape with all the filling inside
8)Eight step, burrito
Now you can roll it like a burrito holding the sides as you roll it. Make sure to do it tightly from one end to the other.
