You can make so many variations on this recipe, and change it however you want. If you don’t like Nutella you don’t have to use it. This could be made as a classic pancake stack too.

Variations in ingredients
Here are some things you could change on this recipe.
1)eggs: instead of using two eggs you could use 1 whole ripe banana, never blend the mixture if you are using it just mash it with the help of a fork.
2)sugar: the use of sugar in recipes is really personal. You can always reduce the quantity, use other sweeteners or salt in case of wanting to make this pancake salty.
3)milk: we are using whole fat cow milk for this recipe, but you can always use vegan drinks instead.
4)oil: extra virgin olive oil for this one because we are healthy (jk lol). You can use any seeds oil you like the most or even butter.
5)baking powder: you could use baking soda instead.
How to stuff it
In this case we are stuffing them with Nutella, you should freeze the Nutella so its easier to handle and not that messy, it doesn’t really freeze Completely but you will be able to grab it with your hands and place it in the middle of the Nutella pancake without any trouble.
Freeze it about 30 minutes before using it, but if by any chance you don’t have time to do that just grab a spoon and put the Nutella in the middle with it.
Nutella pancakes
Pancakes are so easy to make, but they have a few tricks that I’ve learned by making a lot of mistakes.
You don’t want to use a lot of fat to cook them. Only use a couple drops of oil or the equivalent with butter. Using a paper towel you want to spread it all over the pan. If you use a lot of it, they will be good but patchy in colors. They will be fried.
You should put the pan for a minute in the stove so its a little warm but not hot, if its hot, while the batter it’s spreading it’s gonna leave a lot of circles and they will not look as smooth.
Use a non stick pan for this. Here you have an example of one that i have (not the exact Same that the one we are using because it’s super old. NON STICK PAN
Cook them at low heat until you start seeing bubbles or holes on top and then using a spatula turn it around.
Process
Freeze
You can freeze the batter for the pancakes and you can also freeze them after cooking. In the first case you could put them in silicon ice cub trays so then they’re super easy to remove without unfreezing them, or you could also just put it in a Tupperware and unfreeze right a couple hours before cooking, dont microwave it to do this because then it would cook and you would end up having scrambled eggs.
If you want to freeze them after they have been cooked you can wrap them individually with plastic wrap they last up to 3 months in the freezer. Put them in the Microwave for a couple minutes before eating or in a pan and they’re perfect.

- 110 grams granulated sugar (0.55 cups)
- 250 ml whole fat cow milk (8.45 floz)
- 3 tablespoons extra virgin olive oil
- 300 grams all purpose flour (2.4 cups)
- 2 teaspoons baking powder
- 100 grams Nutella (3.53 oz)

2)Second step, sugar
Okay this is really important because you want to make sure that you pour the sugar and whisk the eggs at the same time like really fast, if sugar gets in contact with an egg yolk for example it will cook the egg yolk and you would have tons of egg lumps.
3)Third step, liquids
You want to add milk and oil and mix
4)Fourth step, sift flour
Sift the flour and baking powder, add it to the batter

Make sure to mix everything with the help of a whisk. If you see any flour lumps you can blend the batter until smooth.
6)Sixth step, cooking
Put your non stick pan on low heat in your stove, add a couple of drops of oil and spread it with paper towel and when its a little warm (not too hot) you want to add your pancake batter, cover it with a Lid and cook for one minute on low heat *we have a butane gas stove, which may be different when cooking with electric and induction stoves*
Add the Nutella on top!!! As many as you want okay

You want to add more batter on top but only where the Nutella is so like to cover it. Cover with a lid and keep checking it. You know it’s time to flip it around when it starts to make bubbles and kinda cooking like you can see that it’s cooked but not fully. If you flip it when it’s already cooked it will be super dry, trust me pls.

When you flip it the first one is normally the ugliest, (the one in the pan is the first one )but then as you keep making them they are gonna be looking prettier. Also, don’t add oil on each pancake you make, just spread the fat you had on the paper towel.
