Funfetti scoopable cookies
A fun birthday treat that everyone will love, this is my favorite recipe for Funfetti scoopable cookies. After sharing two different versions on our website, a s’mores one and red velvet Nutella, we decided to make a very fun one, one with birthday sprinkles and white chocolate that will beautifully melt inside the cookie.

They have a very crunchy exterior and gooey center. You can either enjoy them as cookies or with ice cream on the side.
It’s not my birthday, but I have been wanting to make so many birthday-themed desserts lately, cake, tiramisu, and even Funfetti rolls. They’re colorful, very fun, and lovely to make.
For most of our cookie recipes, we prepare brown butter, but not for this one. If you choose to prepare brown butter for this recipe, add 40 g of soft butter.

- Butter: We will use unsalted butter, which gives us better control over the amount of salt that goes into the dessert. Hey, if you want to use salted butter, you can do it anyway!
- Sugars: a mixture of granulated sugar and brown sugar. One is for crispiness, while the other is for a softer cookie. In difference from our other cookie recipes, like our bb chocolate chip cookies, cookie fries, or Nutella cookies, this recipe has a higher amount of granulated sugar and less brown sugar.
- Salt: Balances the sweetness of the cookie dough and enhances the flavors.
- Eggs: Eggs bind the ingredients together. They should be at room temperature so they can incorporate better into the dough.
- Vanilla: Use a pure vanilla bean paste or vanilla extract.
- Baking powder: It will puff up the cookies and bake beautifully.
- Flour: All-purpose flour for structure.
- Birthday sprinkles: They’re fun, colorful, and everyone loves them!
Try to find sprinkles that are made for baking; this will help with the colors not bleeding into the dough. You can find them online.
We are choosing our favorite white chocolate callets from Callebaut; they taste delicious and are of incredible quality. They always melt beautifully, which makes it perfect to create those chocolate pockets that we want to have inside each cookie.
Overview: How to make cookie dough

If we were making one of our other cookie recipes on our website, we would start by browning the butter; for this specific recipe, we decided to omit this step and simply melt it. You can brown the butter instead.
Mix the butter with the sugars, salt, and vanilla, add the baking powder, flour, and finally sprinkles.
Important note: Make sure you let the dough chill in the fridge for at least 1 hour.
We have made plenty of scoopable cookies on our website, and this one is by far the one we enjoyed making the most, even though it is very simple and easy to prepare at home. That’s why it is so viral.
Variations
This recipe is very versatile, and you can shape them however you want to. If you prefer doing individual cookies, be sure to leave more distance between them. You could also prepare a stuffed cookie pie. Following the same instructions from when we prepared a Nutella cookie pie.
We chose a white chocolate filling, but you could do a cream cheese, powdered sugar, and vanilla extract filling. All you have to do is mix it and add it with a spoon in the center of each of the cookies. This will be perfect if you want to make a cheesecake stuffed Funfetti scoopable cookie.
Assemble each of the cookies
The filling for his cookie dough is very simple: white chocolate callets. We were initially debating whether we wanted to do a cheesecake-style filling, and we ended up deciding on a simple white chocolate.
The idea for this is to make something that’s quick and easy, that won’t take too long to prepare or too much effort. This makes it perfect for birthday parties or any other occasion.
Start by dividing the dough into 8 equal-sized cookie dough balls. Flatten the center and fill it with chocolate, seal it so the chocolate doesn’t escape and burn.

Using your fingers, make little dents all over the cookie dough so they more rustic after they bake.
MY BEST tips to make Funfetti cookies
This recipe for cookie dough is very versatile, as you can add any sprinkles you want, perfect for Christmas, for any chocolate you want to use, and for any occasion.


- We let the cookie dough chill in the fridge so it can make a more flavorful cookie, and also helps it hold its shape better.
- Using a mixture of sugars gives us the perfect cookie texture. These Funfetti scoopable cookies will be crispy on the outside and very soft on the inside.
- We have increased the amount of granulated sugar slightly and decreased brown sugar. We wanted this one to be extra crispy.
- If you can get a hold of some good sprinkles that won’t bleed, you will have an even more beautiful cookie. We can’t seem to find a good enough birthday sprinkle collection that can hold the color.
- Don’t over-bake the cookies, even if it’s tempting to bake them for a longer time because they don’t look ready, they will finish setting in the same baking pan.
- Overbaking will give you hard cookies at the end.
Serving suggestions
I can’t think of anything better than enjoying this Funfetti scoopable cookie with a big scoop of vanilla ice cream, especially when celebrating something special.
Make sure to serve them warm but not HOT, they will be too soft. If you are eating them the next day, be sure to preheat them in the microwave before enjoying so they are nice and warm.
You can freeze Funfetti cookie dough
This is perfect if you want to prepare the cookie dough and enjoy the cookies at another time; you will freeze it at the step where you shape the cookies into balls. They freeze beautifully for up to 3 months. I don’t recommend leaving them any longer, or they can get this weird freezer taste flavor.

To bake, you don’t even need to defrost; just follow the baking times mentioned in the recipe card, and they will turn out delicious.

Ingredients
COOKIE DOUGH
- ¾ cups + 1 tbsp (180 g) unsalted butter
- ½ cup (100 g) granulated sugar
- ½ cup, packed (100 g) brown sugar
- ¼ tsp (1.5 g) salt
- 1 tsp (5 g) pure vanilla bean paste
- 2 eggs
- 2 1/2 tsp (10 g) baking powder
- 2 2/3 cups (320 g) all-purpose flour
- 1/3 cup (50 g) Funfetti sprinkles
FILLING
- ½ cup, 8 tbsp (85 g) white chocolate callets
Instructions
- Start by melting ¾ cups + 1 tbsp (180 g) unsalted butter and let it cool slightly. In a mixing bowl, add ½ cup (100 g) of granulated sugar, ½ cup (100 g) of brown sugar, and ¼ tsp (1.5 g) salt. Pour in the melted, slightly cooled butter. Add 1 tsp (5 g) pure vanilla extract, you could use vanilla extract instead. Mix it very well with a whisk, if the butter cooled enough it will emulsify and will turn slightly pale.
- Crack 2 eggs into the sugar mixture, whisk again just until the egg has incorporated fully. Add 2 ½ tsp (10 g) baking powder and 2 2/3 cups (320 g) all-purpose flour. Mix it with a spatula instead of a whisk, this is essential for the structure. Add 1/3 cup (50 g) of Funfetti sprinkles. Mix again with the spatula.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hour.
- Divide the dough into 8 portions, you can optionally weight the dough and divide it into 8 to have equal sized cookies, sink the middle to make a well, and fill each one with about 1 tbsp of white chocolate callets, seal the cookie dough pinching it together. Using your fingers, make dents in the cookie for more texture. Chill the dough again for 1 hour before we bake it.
- Preheat the oven to 355 F (180 C), and once it’s ready, bake the Funfetti scoopable cookies for about 18 minutes.

Baking notes: each oven is completely different. After 15 minutes, check the oven to see how it’s going.
Decoration tip: You can add some extra sprinkles on top for a better appearance after they have baked.
If you want to freeze the cookie dough before you use it, you can do it after you fill the cookies with the white chocolate and seal it.
