Our dad went the other day to the fruits market and found these really ripe apricots for only 0.50 euro/kg, he grabbed a full bag of those, we ate almost all of it and then we decided to make jam.
Making homemade jam is probably one of the easiest things to do, you don’t need a lot of time or expensive stuff and its so much better than the store bought ones.

Cooking time
Make sure to clean the apricots, dry them and remove the seed. No seed should stay in the apricot jam.
It’s probably gonna take you about 30 minutes on medium low heat, stir constantly to make sure it doesn’t get burned and all the fruit cooks evenly.
After cooking you can choose if you want to blend it or if you wanna leave all the apricot chunks in there.
Sterilize jam:
- Make sure to only use clean and dry jars.
- Fill the jars with the jam until the top, the jam has to reach the top of the jar almost touching the lid.
- Make sure you close the jars tightly.
- Use a big pot and put a kitchen towel, then put the jars and cover with water, water should be covering completely the jars.
- Put it in the stove at strong flame or high heat and when it starts boiling set a timer for 40 minutes.
- After this time, you can storage them in a dark place, no need to keep them in the fridge, it can last up to 1 year and a half.
Here you have an example on how you should put the towel or clothing thing you wanna use, this will prevent the jars from breaking.

If you dont have really ripe apricots you can use them anyways, its gonna be a little acid if you like that then it’s perfect.
I like them better when they’re really ripe so they’re really sweet.
you can always change the apricots for strawberries, raspberries or whatever fruit you prefer. Same food x sugar ratio. 2:1 for 2 kilos of fruit you wanna use 1 kilo of sugar.
If you use too much sugar it’s gonna crystallize and it’s also gonna be way too sweet. Fruits have natural sugars and when you cook the apricots they’re gonna be already sweet. Sugar is more to preserve to jam for longer time.

- 800 grams ripe apricots
- 400 grams granulated sugar
INSTRUCTIONS:
1)First step, clean and dry jars
You can buy brand new jars or you can use old jars, always make sure the lid closes and it’s not broken. Clean them and dry them. Make sure they’re super clean inside specially.
2)Second step, prepare apricots
Clean the apricots, dry them with paper towels and remove the seed. Make sure there’s no seeds left on the apricot jam.
3)Third step, cook
Add sugar to the apricots and cook them for about 30 minutes, until you like the consistency of the jam. Maeve sure to stir constantly so it doesn’t stick to the pan and gets burned.
4)Forth step, fill the jars
Fill the jars with jam to the top, it should almost reach the lid, there should not be a lot of space. Now make sure you close them tightly.
5)Fifth step, sterilize jam
Put a towel, shirt or whatever clothing thing you have and put it at the bottom of the pot, and on the sides too. This will prevent the jars from breaking. Now cover them with water, it should be above the jar. Stove at high heat and once they start boiling set a timer for 40 minutes. Make sure it’s boiling all the time during the 40 minutes, it should not stop. You can then store them in a dark place, no need to keep them in the fridge.
