Ingredients

dough

  • 125 Ml water
  • 113 Grams bread flour
  • 113 Grams AP flour
  • 1 Tbsp olive oil extra virgin
  • 1 /2 Tsp salt
  • 1 Tbsp Turmeric
  • 15 Grams fresh yeast

toppings

  • 1 Tsp oregano
  • 50 Grams mozzarella
  • 8 cherry tomatoes
  • 1 Chip chocolate or black food coloring

Instructions

dough

  • First of all you want to add both of your flours (bread and AP), water, fresh yeast, salt, turmeric, extra virgin olive oil and fresh yeast into your bowl of preference. At this point you can use the one that comes with the stand mixer so you don’t have to clean as many bowls.
    125 Ml water, 113 Grams bread flour, 113 Grams AP flour, 1 Tbsp olive oil, 1 /2 Tsp salt, 1 Tbsp Turmeric, 15 Grams fresh yeast

(orange dough)

  • mix everything and separate about 10 grams of dough.
  • add orange food coloring to this tiny dough and mix until you like the color. Put it in an oiled bowl. We don’t need to knead this that much and since applying the color is gonna take a while, it’s gonna be perfectly kneaded.

back to the normal dough

  • with the dough hook attachment knead the dough in the stand mixer at medium speed for about 15 minutes.
  • The dough should be more elastic looking and it should be ready now.
  • allow your dough to proof in an slightly oiled bowl. Cover it with damp paper towel or some clothing trap you can find for 40 minutes.
    It’s really important that it stays in a warm place, this will make it easier and the dough will raise faster. If you want you can also leave the dough at this point overnight on your fridge and use the next morning.
  • separate the dough into 4 sections from the same size it should weight something like 74-76 grams.
  • shape each section into a ball and put it over some parchment paper so we don’t have to move it later and mess the whole ducky duck.
  • here you are supposed to cover the dough and allow it to proof again for 10 minutes, do i have to say that we forgot to do this? Just do it so it’s gonna be looking super smooth
  • now you can press the stomach and you want to leave bigger space on the top of the duck so you can later put the nose and eyes. Check the process pictures so you know what i mean best.
  • now grab the orange dough and you need to make 12 tiny balls, with the weight im giving you they should look smaller than what we did because ours were too big. You put a tiny bit of water like nothing just a bit to the places where you wanna add the nose and ducky feet.
    This will help you stick the parts, but if you add too much water its gonna slip and never stick.

toppings

  • okay here you can be creative and add whatever you like the most, we just added stuff we had in our fridge that’s why its looking poor but it was yummy too. If you have feta cheese omg you should add it here because its gonna be looking amazing!
  • but yeah we used cherry tomatoes, mozzarella and oregano.

bakes

  • bake at 200 C or 390 F for about 13 minutes.

extra

  • we melted one chocolate chip and used it for the eyes, this is kinda unnecessary you can add balsamic vinegar, bbq sauce, food coloring, or whatever is in your eye thing of choice?
  • now you can eat it but not before sending us a picture on insta @archersfood so we can see your creations!
