Chocolate Nutella mini pancakes

These Chocolate Nutella mini pancakes are everything you need for a quick Nutella breakfast. It doesn’t require any complicated steps.

This recipe is inspired by one of our most famous recipes, our chocolate Nutella pancakes, Nutella stuffed pancakes, or the mini version, Nutella mini pancakes.

What’s so special about this recipe besides the fact that it gives you the fluffiest, most delicious chocolate pancakes? This version is way easier than any other; you won’t need to pre-freeze the Nutella, which makes it pretty easy, and you have no danger of spilling the whole pancake when flipping it, as it’s in a smaller version.

Ingredients you will need

The ingredients you see in this list you will notice how they are very similar to our Nutella crepe rolls recipe; basically, a pancake is a thicker and fluffier crepe.

  • Eggs: make sure they are at room temperature for easier integration into the pancake batter. If you forgot to take them outside to prepare this recipe, you can do this little trick where you place them inside a glass with warm water.
  • Milk: whole milk as a preference.
  • Oil: any neutral oil will work (or even melted butter*). My preference in oil is always sunflower or olive oil for neutral flavor.
  • Granulated sugar: This will sweeten the pancake.
  • Allpurpose flour: gives structure to the pancakes.
  • Cocoa powder: Use 100% cocoa powder with no sugar added. This is important to have better control over the amount of sugar that goes into the recipe.
  • Leavening agents: baking soda and baking powder. We will use both for this recipe.
  • Salt: balances the sweetness and makes it more tasty.

A little note on whoever adds melted butter instead of oil: make sure the milk is slightly warm, or the butter will leave butter chunks as it touches the cold milk. This happened to me one time, making the mango crepe rolls, and I almost cried.

How to make Nutella-stuffed pancakes without a Nutella disk

Since this is a smaller version of our chocolate pancake, it needs way less time to cook than the bigger pancake. You can spoon the Nutella into the middle of the pancake. With the heat, it will spread slightly and create a perfect mini pancake.

A Nutella disk would only be necessary when making larger pancakes.

How to make pancake batter

In a mixing bowl, you will mix the dry ingredients, and in a separate one, the wet ingredients. We do it in two different bowls to avoid overmixing. Then, we will put them together.

Preheat a pan on the stove on medium-low heat. Using a spoon or piping bag, add the pancake batter to the pan, about 2 tbsp, then cover with a lid and cook for 1 minute or until you notice the bottom of the pancake is drier. Then, add a spoonful of Nutella in the center. Cover with more pancake batter. Cover again for just 1 minute and flip them.

Repeat until you cook all the pancake batter.

Tools you need

We use the same tools for our cinnamon roll pancakes, fluffy mini pancakes, cottage cheese pancakes, and dorayakis.

  • Mixing bowls: We need at least two, one for the dry ingredients and another one for the wet ingredients.
  • Whisk: to mix the pancake batter.
  • Pancake pan: or any pan you have that is non-stick and will ensure your pancakes don’t stick to the pan.
  • Spatula: to flip the pancakes.
  • Lid: so they can cook thoroughly.
  • Spoon, ladle, or piping bag: to pour the pancake batter into the pan to make perfect round pancakes.

Making pancakes is super easy, but here are some things you should probably know to make the process faster and easier, and understand every step.

  • Pancake batter is normally thicker and slightly lumpy. You don’t try to overmix the batter. Overmixing can lead to dense and chewy pancakes.
  • High heat doesn’t exist when making stuffed pancakes; always medium-low so they can thoroughly cook.
  • Don’t forget the lid. It’s super important so they can cook thoroughly.
  • Since they are smaller than our og recipe, they don’t need a long cooking time.
  • If you use butter to make the pancake batter, it is very important that the milk is warm, or it will leave many butter chunks.

Dense pancakes?

The main reason why you end up with dense pancakes is how you worked the batter. If there’s any overmixing or trying to remove the lumps by blending it, this normally gives you chewy pancakes that are dense.

Is the pancake batter supposed to be thin?

No, not too dense, not too thin.

When you have a thin batter, you have a crepe batter, for recipes like our Kinder Bueno crepes or sushi crepes.

When you want to make chocolate pancakes, you need a thicker batter. Not too thick that you can’t even manage it, but thick enough that if you write with the whisk in it, the drawing stays for 10 seconds.

What’s the difference between pancakes and crepes

Crepes are a thin French treat; they don’t have any leavening agent, they are soft and chewy, and are typically rolled or filled. Pancakes are thick, they are fluffy, and they need leavening agents like baking powder/baking soda to puff up.

How to best serve mini chocolate Nutella pancakes

Nutella pancakes are best served for breakfast, warm so the Nutella is melty and the pancakes are fluffy.

If you want to create a more complete breakfast, add some berries on the side, whipped cream, or even syrup. I love enjoying anything with milk, so pancakes with milk, Nutella on the side, and bananas are in my house.

How to store pancakes

If you have any leftover pancakes, don’t throw them.

Keep them in a food container in the fridge for up to 3 days. You can enjoy them like fresh even days after.

The best way to restore the flavor and textures is by cooking them again with butter. In a pan, heat up the butter until it’s bubbly, then add your pancakes and cook them in the butter. The edges will become crispy, the Nutella will melt, and the pancakes will become fluffy again.

Can you freeze pancake batter?

Yes! It’s ideal for easy breakfasts where you don’t even want to prepare the pancake batter. Pour the pancake batter into silicone freezer cubes and then just pop them out to cook whenever needed.

They can be stored for 2-3 months, and you don’t need to thaw them before using.

Ingredients

PANCAKE BATTER

  • 2 eggs
  • 1 cup (250 ml) milk
  • 3 tablespoons oil
  • 2/3 cup (130 g)  granulated sugar
  • 2 1/2 cups (300 g) all-purpose flour
  • 2 tbsp cocoa powder
  • 2 teaspoons baking powder
  • 1/4 tsp salt

FILLING

  • 1/3 cup (100g) Nutella


Instructions

  1. Prepare the pancake batter. Start by whisking 2 eggs, 1 cup (250ml) milk, and 3 tbsp vegetable oil. In a separate bowl, mix 2/3 cup (130g) granulated sugar, 2 ½ cups (300g) all-purpose flour, 2 tbsp cocoa powder, 2 tsp baking powder, and 1/4 tsp salt.
  2. Once mixed, add the wet ingredients to the dry.
  3. Preheat a non-stick pancake pan over medium-low heat and add about 2 tbsp of pancake batter. Cover with a lid and cook for about 1-2 minutes, depending on your heat; they should start to bubble slightly. Add about 1 tbsp of Nutella in the middle and cover with more pancake batter. Put the lid back on again and cook for 1 more minute, flip the pancake and cook 1 more minute.
  4. Repeat until you have cooked all the pancake batter.
