Ingredients

Sponge or yeast mixture

  • 100 ml of lukewarm water
  • 1 teaspoon of active dry yeast
  • 1 tablespoon of granulated sugar

Dough

  • 1 egg
  • 30 grams of soft butter
  • 240 grams of all purpose flour
  • 30 grams of granulated sugar
  • 20 grams of sorbitol not necessary

Frying

  • Seeds oil for frying

Decoration

  • 200 grams of white chocolate
  • Pink food coloring
  • Colored sprinkles

Instructions

  • We are starting with making our sponge, mixing lukewarm water, granulated sugar (only 1 tablespoon) and active dry yeast. Make sure to cover and place in a warm place. About 10 minutes later you should be seeing foam on top or like bubbles and that means its ready to use.
  • At this point you want to use a mixing bowl, add the rest of the dough ingredients, like flour, sugar, soft butter, one egg and the yeast mixture we did before. We also added on this recipe sorbitol just because we were doing some experiments, it will make the donut extra soft but if you don’t have it it’s literally fine and you don’t need to use it, just mentioning it because you obviously see it here.
  • pour all your dough in the stand mixer bowl if you weren’t using it already. Use the dough hook attachment on medium low speed for about 15-18 minutes or until you see the dough getting elastic.
  • You will know if the dough is ready because it should look elastic, if you feel like it needs more time, knead for a bit more. Now make sure you are using a clean and slightly oiled bowl, like we did and you can see on the picture…and cover with a kitchen towel, damp paper or plastic wrap. Let it proof in a warm place for about 1h and 30 minutes and you should know if its ready because it would be 2x times grown in size.
  • Extend the dough using a rolling pan at this point you can add about a tablespoon of oil on your working surface. I personally like to extend the dough directly on the parchment paper so I don’t have to move it around and it doesn’t stick anywhere. (About 1.5 cm/ 1/2 inch thick).
Now using a cookie cutter or glass, cut the big donut shape and for the middle hole use the back of a piping tip
  • We are now closer to eat a pink Simpson donut. After cutting all of the donuts you want to place them in a tall pan or leave them on the Same surface but covering them with plastic wrap or a towel to prevent them from drying. After 30 minutes they are ready to fry!
  • Make sure to use a big cooking pan becase they will expand like crazy. Fill it with as much sunflower seeds oil as you can, you are not gonna use all of it but if it doesn’t have a lot it will burn and it will absorb much more oil. The oil should not be too hot or too cold, it should be making bubbles but not a lot like crazy bubbling, they should be looking golden brown. To make them prettier using a round utensil, press it slightly on the sides of the pan.
After you fry them make sure to drench the excess of oil using a bunch of paper towels. This will absorb all of the extra, it will not make them healthier but you will not be eating this excess.
  • Melt white chocolate, add food pink coloring. You wanna dip the pink Simpson donut and you can cover it both sides if you want, since chocolate is super expensive we only did one side. Do whatever feels right to you. Right after dipping it into the chocolate place it in a cooling rack and add the sprinkles on top! And youre done! :)
