The best breadsticks Olive Garden copycat

Ingredients

dough

  • 250 grams bread flour
  • 50 grams all purpose flour
  • 180 ml water
  • 40 grams butter
  • 12 grams milk powder
  • 18 grams fresh yeast or 10 of yeast and 30 sourdough

extra

  • Parlsey
  • 1 tablespoon of Butter
  • 1 Egg

Instructions

  • If you are using powdered milk make sure to warm up the water in the microwave until you feel it hot so it dissolves the powder easier. Just whisk until you can’t see any possible milk lumps.
  • When using fresh milk you don’t have to do this step at all, just mix it with the ingredients like on ‘2)second step.’

2)Second step, moist ingredients

  • Add butter to the milk and since it’s hot it will get super soft and pretty much melt, this will make the kneading so much easier. We added sourdough, since it was our first time making it we also used fresh yeast just in case. Now you can go ahead and mix with a spatula, like i said before it will all pretty much melt.

3)Third step, dry ingredients

  • you want to add all the dry ingredients, bread flour, all purpose flour, salt and fresh yeast if you didn’t add it before, if you did ur good. This is just a reminder.

4)Forth step, kneading

  • Here we are showing you that it’s possible to knead without using a stand mixer but if you do have one i highly recommend you to use it this time so it will make the job easier. Make sure you are kneading it for about 15 minutes on medium speed with the dough hook attachment.
  • If you have to knead by hand because you don’t have a stand mixer or don’t wanna use it make sure to knead it for at least 20 minutes.

5)Fifth step, dough

  • Roll out the dough do 10-12 cuts up and down, up and down, im sure this has a name. But you understand me, if you don’t just look at the pictures. I feel like just watching the pictures you guys could do the recipe without my help, im just here writing things that you are probably not even reading.

6)Sixth step, first resting

  • We are allowing our dough to proof, sure to allow the dough to rest for about 1h, really approximate time because you just need to make sure it’s super grown, about 2x times the original size. In order to fasten this process you want to make sure to allow the dough to proof in a warm place, could be by the fireplace, outside on a sunny day…
  • Cover it with damp paper, a kitchen towel or some plastic wrap. If you decide to use a kitchen towel make sure you use a wet one (not dripping wet, make sure to remove all excess of water. This is just so the dough doesn’t dry out)

7)Seventh step, cut and shape

  • Here is where we realized they were too big so we made them smaller, you want to make this shape with each piece of dough. Is really easy just look at the pictures and you will understand.
  • Place them in a baking pan and allow them to proof for 30minutes. They will get smother and prettier and they will also grow. Make sure to cover them with a damp towel or plastic wrap.

8)Eight step, egg-wash

  • Beat one egg and spread it all over the dough. You want to bake them at 210 C or 410 F for about 9 minutes, all the ovens work different so what were 9 minutes for me may be 7 or 11 for you. Always keep an eye on your oven specially the first time you bake something. You are so close to eat these Olive Garden copycat breadsticks, only one last step:)

9)Ninth step, butter and parsley

  • We are at the final step where you just want to chop some clean and pat Dry fresh parsley with some paper towels, melt some butter in the microwave, we always add a bit of extra virgin oil so it doesn’t explode that fast when you are warming it up. Make sure to mix and spread all over the now baked bread! Enjoy!
