Ingredients

muffin

  • ½ cup+ 2 tbsp milk (160 grams)
  • ¾ Cup Sunflower seed oil (160 grams)
  • 2 1/2 Cup AP flour (400 grams)
  • 5 eggs
  • 1 ½ Cup granulated sugar (330 grams)
  • 2 Tsp baking powder
  • lemon zest from a whole lemon
  • extra sugar to put on top

frosting

  • 1 Cup mascarpone cheese (225 grams)
  • 1 Cup icing sugar (120 grams)
  • 1 Tsp vanilla

Instructions

muffin

  • youre gonna mix all the ingredients in a bowl (milk, oil, eggs, sugar, baking powder and lemon zest) until well combined.
  • put some muffin paper into the baking pan and fill them ¾ part.
  • right before baking youre gonna want to add granulated sugar on top of each
  • bake them at 410 F (210 C ) for 6-8 minutes. They should look bigger and with a little color. Now you’re gonna set the oven at 340 F (170C ) for 8-10 minutes.

frosting

  • you’re gonna add mascarpone cheese in a bowl as well as the icing sugar and vanilla and mix everything well. Put in a piping bag to use.
  • now decorate the muffin, you’re gonna put some jam into a piping bag and make a hole in the middle of the muffin, add jam, cover with frosting and strawberry.
