Ingredients

cookie dough

  • 240 grams brown butter
  • 70 grams granulated sugar
  • 140 grams brown sugar
  • 1 tablespoon vanilla extract
  • 2 eggs
  • 300 grams all purpose flour
  • 200 grams chocolate chips

filling

  • 150 grams Nutella

optional decoration

  • 40 grams chocolate chips

Instructions

step one, Brown the Butter

  • Browning butter is key to enhancing the flavor of this Nutella cookie pie. Melt the butter in a saucepan over medium heat. Stir constantly as the butter begins to foam and turn golden brown. You’ll notice a nutty aroma when it’s ready. Transfer the browned butter to a heatproof bowl and let it cool completely before using.

step two, Mix the Sugars and Eggs

  • In a large mixing bowl, combine 140g brown sugar, 70g granulated sugar, and two eggs. Whisk the mixture for 2-3 minutes until it becomes light and fluffy. This step is essential for achieving the perfect cookie texture.

step three, Add Vanilla and Cooled Brown Butter

  • Pour the cooled browned butter into the sugar and egg mixture. Add 1 tablespoon of vanilla extract. Whisk until everything is smooth and well combined.

step four, incorporate Dry Ingredients

  • Switch to a spatula and gently fold in 300g all-purpose flour. Mix until just combined to avoid overworking the dough.

step five, Fold in Chocolate Chips

  • Stir in 200g of chocolate chips. These will add bursts of melted chocolate throughout your Nutella cookie pie.

step six, Prepare the Pie Dish

  • Grease a pie dish with butter or cooking spray. For easier removal, line the dish with parchment paper.

step seven, Assemble the Cookie Pie

  • Press half of the cookie dough into the bottom of the prepared pie dish, spreading it slightly up the sides. Spread 100g of Nutella evenly over the base layer, ensuring the Nutella covers the middle. Then, gently cover the Nutella with the remaining cookie dough, sealing the edges completely. For an extra indulgent touch, sprinkle 40g of chocolate chips on top.

step eight, Bake the Cookie Pie

  • Preheat your oven to 180°C (356°F). Bake the cookie pie for 35-40 minutes or until the edges are golden brown. The center will remain slightly soft, ensuring a gooey texture.

step nine, Cool and Serve

  • Allow the Nutella cookie pie to cool for at least 20 minutes before slicing. Serve with a scoop of your favorite ice cream or drizzle with extra chocolate sauce for the ultimate dessert experience.

Notes

Measure Precisely: Use a kitchen scale for accuracy to ensure the perfect texture.
Cool the Brown Butter: Allow it to cool slightly before adding to the dough to avoid scrambling the eggs.
Don’t Overmix the Dough: Mix until just combined to avoid tough cookies.
Chill the Dough: For the best results, let the dough rest in the fridge for 20-30 minutes before baking.
Layer the Nutella Carefully: Spread the Nutella evenly in the center for that signature gooey filling.
