Ingredients

  • 3 + ¼ cups bread flour (400 grams)
  • 4.94 Oz water (136 grams)
  • 5 Tbsp butter (70 grams)
  • 1 1/2 eggs
  • 1 Block fresh yeast 25 grams ((1 1/2 tbsp)
  • 1/2 Tsp salt

Egg wash

  • 1 egg

Instructions

  • put all the dough ingredients in a bowl
  • knead for 20 minutes
  • allow the dough to proof for 1h30 minutes
  • cut the dough into 4 sections about 170 grams each
  • Fold like on the pictures
  • allow the dough to proof for 25 minutes
  • paint with egg
  • bake at 0 C 392 F for about 34 minutes
