Ingredients we are using in this recipe and why
- all purpose flour, flour acts as the base for you pancake batter, provides the right texture for light and fluffy pancakes without being too dense.
- milk, it adds moisture to the batter, resulting in pancakes that are tender and soft.
- Eggs, they act as the binding agent, providing structure.
- Granulated sugar, balances the flavors and adds sweetness to your pancakes.
- Baking powder, leavening agent in this recipe.
- Melted butter or Oil, fat like butter or oil adds richness and tenderness to the pancakes. We used extra virgin olive oil but you can use any vegetable oil you like.
- Nutella, provides a rich chocolate hazelnut flavor that pairs perfectly with soft fluffy pancakes.
- Vanilla is optional but adds a subtle depth flavor to the batter and complements the Nutella.
How to make the Nutella Disks
Strat by lining your tray with a piece of parchment paper, this will prevent the Nutella from sticking as it freezes and make them easier to remove. Using a spoon or scoop Nutella and place it onto the lined tray. Flatten it using the Same spoon, it’s better to make them thinner and larger. Freeze, it should not take a lot but it’s the first thing you should do before starting with this recipe!
They don’t need to be completely frozen when using, sometimes we don’t have time to wait. Just make sure it’s not melted so they don’t make a mess.
Biggest mistakes and how to fix them,
Making the best fluffy Nutella stuffed pancakes is fun, but sometimes things can go wrong, bellow are the most common mistakes I’ve seen and how to fix them.
The pancakes are too dense:
This happens when you over mix the batter or add extra flour, they can make your pancakes dense and heavy instead of light and fluffy. To avoid having dense pancakes mix the batter just until combined, over mixing develops gluten which can lead to a tougher texture. Sift the pancakes before adding them to the batter to incorporate air and reduce clumping.
The nutella is leaking out or is burnt.
This happens when the Nutella is not sealed properly inside of the pancake or when it’s too thin. It also happens if you use melted Nutella instead of a frozen disk of Nutella. To fix this just make sure your pancake is thick enough to hold the Nutella in the center. Allow your pancakes to cook on medium low heat and don’t rush it.
The pancakes are not cooking evenly
Using too high heat can cause the outside to burn while the inside remains raw. Cook your pancakes on medium / low heat instead of high heat to ensure even cooking. Allow the skillet to preheat before adding the batter. Lightly grease the pan with a drop of oil and spread it using a paper towel.
The pancakes fall apart when flipping
You are probably flipping the pancake before it has set. Wait until bubbles form on the surface of the pancake before attempting to flip. This ensures the bottom is cooked enough. When you are cooking it make sure you are covering it with a lid.
The pancakes stick to the pan
If the pancakes stick to the pan it could be different reasons on why this is happening.
- if you are not using a non stick pan
- the pan is not hot enough
- If you didn’t lightly grease your pan with oil or butter
Make sure your nonstick skillet is preheated and lightly greased with butter or oil before adding the batter. Always use medium het to allows the pancakes to cook without sticking.

- 250 ml milk
- 3 tablespoons oil
- 300 grams all purpose flour
- 2 teaspoons baking powder
- 100 grams Nutell

before you start baking
Line a tray with parchment paper, scoop a spoonful of Nutella and place it in the parchment paper. Repeat leaving some space between each one to avoid sticking together. Flatten them and freeze until solid.
1) step one, crack the eggs and add the sugar
Start by cracking two eggs into Your mixing bowl and beat them with a whisk until fully combined. Gradually add sugar to the eggs while whisking, this is crucial — if the sugar sits on the egg yolks without mixing, it can cook the yolks and create lumps in your batter. Whisk quickly to ensure a smooth mixture.
2) step two, mix in the liquids
Add milk and oil to the egg and sugar mixture. Stir everything together until combined.
3) step three, sift the dry ingredients
Sift the all purpose flour and baking powder into the wet mixture. Sifting removes lumps and adds air, resulting in light and fluffy pancakes.
4) step four, mix until smooth
Use a whisk to mix everything together, if you notice any lumps of flour you can blend the batter briefly until it’s completely smooth.
5) step five, cook the pancakes
Heat a non stick pan on low heat, add a few drops of oil, then spread it evenly with a paper towel. Avoid overheating, the pan should be warm not too hot. Pour the pancake batter into the pan covering with a lid. Cook for 1 minute on low heat. Add your Nutella disk in the middle.
6) step six, cover the Nutella
Add more pancake batter on top, enough to cover the Nutella. This helos seal the filling inside. Cover the pan with the lid again and cook until bubbles form and the edges look set.
7) step seven, flip the pancake
Flip the pancake carefully once you see bubbles and the batter is partially cooked. Don’t wait too long as flipping late can dry out the pancake. Cook for another minute or until golden brown.
Pro tip!
The first pancake is often the tester and may not look perfect, as you continue the rest will look prettier and smoother, avoid adding too much oil between each pancake.
