Ingredients
crepe batter
- 2 eggs
- 250 grams warm. milk
- 100 grams all purpose flour
- 40 grams granulated sugar
- 25 grams melted butter
filling
- 100 grams Nutella
decorate
- powdered sugar
Cooking
- 1 tablespoon butter
Instructions
step one, Mix the Wet Ingredients
- In a large mixing bowl, crack 2 eggs and add 250 grams of warm milk. Whisk until the eggs are fully combined with the milk. Pour in 25 grams of melted butter and whisk again until smooth.
step two, dry ingredients
- In a separate bowl, add 100 grams of all-purpose flour and 40 grams granulated sugar. Whisk until all the ingredients are fully incorporated.
step three, add the wet ingredients to the dries
- To the bowl of dry ingredients add the mix of wet ingredients, mixing making sure the batter is smooth and has no lumps. For an extra-smooth batter, pass it through a sieve to remove any remaining lumps.
step four, cook the crepes
- Heat a non-stick pan over medium heat and lightly butter it to prevent sticking. Pour a ladle of batter into the pan, swirling it around to coat the surface evenly. Cook the crepe for about 2 minutes, or until the edges start to lift and the bottom turns golden. Carefully flip the crepe and cook for another 2 minutes. Repeat this process until all the batter is used—you should end up with about 10 crepes.
step five, Assemble the Crepe Rolls
- Lay a crepe flat on a clean surface and spread a generous layer of Nutella evenly across the center. Fold the sides of the crepe inward, then roll it up tightly, ensuring the filling stays inside. Repeat this process with the remaining crepes.
step six, Plate and Garnish
- Arrange the rolled crepes on a serving plate. For a finishing touch, sprinkle a generous amount of powdered sugar over the top. You can also add fresh fruits like sliced strawberries or bananas for a refreshing contrast. Serve immediately and enjoy!
Notes
— Sieve the batter: For ultra-smooth, lump-free crepes, always pass the batter through a sieve before cooking.
— Room temperature ingredients: Cold milk can cause the melted butter to solidify. Let your ingredients come to room temperature before mixing, or warm the milk slightly in winter.
— Non-stick pan: A good non-stick pan ensures easy flipping and prevents the crepes from tearing.
— Spreadable Nutella: If your Nutella is too thick, microwave it for a few seconds to make it easier to spread.
