M&M Nutella Cookie pies

Delicious M&M Nutella cookie pies, this easy Nutella dessert is made with a cookie dough built in a ramekin, filled with Nutella. The edges are crispy and the center soft, with a molten Nutella interior.

Ingredients

COOKIE DOUGH

  • 1 cup (230 g) unsalted butter, room temperature
  • 1/3 cup (68 g) light brown sugar
  • ½ cup (140 g) granulated sugar
  • ¼ tsp (1.5 g) fine sea salt
  • 2 eggs, medium-sized, room temperature
  • 2 1/2 tsp (10 g) baking soda
  • 2 2/3 cups (320 g) all-purpose flour
  • ½ cup (108 g) mini-M&Ms

NUTELLA FILLING

  • 8 tbsp (128 g) Nutella, room temperature


Instructions

  1. To prepare M&M Nutella Cookie Pies at home, start by preparing the cookie dough. In a light colored pan, brown 1 cup (230 g) unsalted room temperature butter. Start by melting it over medium-low heat, making sure to stir as you melt it. Once the butter is melted, it will start to bubble, the bubbling becomes more intense, and you will notice how the milk solids start to brown. Keep stirring. When the butter becomes golden brown or deep amber, turn off the stove and set it aside. Let the butter cool for 10-15 minutes.
  2. In a mixing bowl, add the cooled brown butter, with 1/3 cup (68 g) light brown sugar, ½ cup (140 g) granulated sugar, and ¼ tsp (1.5 g) fine sea salt. Mix it very well using a whisk for 2-3 minutes.
  3. Add 2 medium-sized room-temperature eggs and mix again. Add 2 tsp (10 g) of baking soda and 2 2/3 cups (320 g) of all-purpose flour. Fold it using a spatula and then add ½ cup (108 g) mini M&Ms, or your preferred M&Ms.
  4. Let the cookie dough chill for 15 minutes. Prepare a tray with 4 ramekins in it.
  5. Preheat the oven to 355F (180 °C).
  6. Prepare the cookie pies; each cookie pie will need about 2 ½ cookie scoops, approximately, depending on how big your cookie scoop is. Divide the cookie dough into 8 equal portions to make it easier. On each of the ramekins, place one portion of cookie dough and flatten it, bringing it slightly to the sides. Add about 2 tbsp (32 g) of Nutella into each of the ramekins. Flatten the 4 cookie dough left into disks and cover the Nutella with it. I like to do some dents in the cookie dough, so it has more texture after baking.
  7. Bake the cookie pies in the preheated oven for 15 to 18 minutes. Remove from the oven and let them cool slightly, about 10 minutes, before enjoying.

Notes

It’s important that the butter is at room temperature so it doesn’t splatter everywhere; frozen or cold butter can splash a lot, and you can easily get burnt with it.

You can add more decorative M&Ms after they bake; this way, they will look amazing! We do this trick in many of our cookie recipes, like our chocolate chip and double chocolate.

Some people love to add some flaky salt on top of the Nutella and M&M pies after baking!
