Description
Delicious creamy birthday tiramisu, made with Funfetti for a more colorful celebration.
Ingredients
MILK
- 1 ¼ cups (300 ml) milk
- 2 tbsp granulated sugar
TIRAMISU FILLING
- 1 cup (235 ml) heavy whipping cream
- 2 cups (500 g) mascarpone cheese, room temperature
- Slightly over ½ cup (125 g) full-fat cream cheese, room temperature
- 1 2/3 cups (200 g) powdered sugar
ASSEMBLE
- 13 ladyfingers for the first layer
- 2 tbsp Funfetti sprinkles over
- 13 ladyfingers for the next layer
- 2 tbsp Funfetti sprinkles
DECORATE
- 4 tbsp Funfetti sprinkles
Instructions
- Start by preparing the milk mixture to soak the ladyfingers. In a pot, combine 1 ¼ cups (300ml) of milk with 2 tbsp granulated sugar. Warm it up until it all combines, and the sugar has melted. Let it cool slightly.
- In a stand mixer bowl, weigh 1 cup (235ml) of heavy whipping cream. Use the whisk attachment and whip on high speed until you reach medium peaks.
- In a mixing bowl, combine 2 cups (500g) room temperature mascarpone cheese and slightly over ½ cup (125g) full-fat room temperature cream cheese. Use a wooden spatula or a hard spatula to work them together. Add 1 2/3 cups (200g) powdered sugar. Fold in the whipped cream.
- Assemble the Funfetti tiramisu. Soak the ladyfingers, one by one, with the milk mixture we prepared earlier. For the first layer, we will need about 13 ladyfingers and 2 tbsp of Funfetti. Add half of the mascarpone mixture and smooth out, add another layer of 2 tbsp of Funfetti. Repeat with another layer of soaked ladyfingers, we are going to use 13, and the rest of the mascarpone filling. Smooth out and refrigerate for at least 8 hours, covered with plastic wrap.
- To decorate, sprinkle 4 tbsp of Funfetti first on the sides and then the rest all over the cake.
