  • 110 grams granulated sugar
  • 250 ml whole fat cow milk
  • 3 tablespoons olive oil
  • 300 grams all purpose flour
  • 2 teaspoons baking powder

Instructions

step one, prepare the eggs

  1. Crack two eggs into a glass to check for freshness before adding them to your bowl. Beat the eggs with a whisk until fully combined. This ensures smooth batter consistency.

step two, add sugar

  1. Pour the sugar into the eggs while whisking vigorously, this prevents the sugar from directly contacting the egg yolks, which could cause lumps or partial cooking. Smooth eggs and sugar are key to fluffy pancakes.

step three, mix the liquids

  1. Add milk and oil to the egg mixture, if you are using butter, melt in the microwave beforehand for easy incorporation. Stir gently to blend the liquids evenly.

step four, sift dry ingredients

  1. Sift flour and baking powder together using a flour sifter or sieve. Add baking powder.

step five, combine and mix
