A cookie dough cheesecake is a delicious dessert that combines two of the most loved treats cookie dough and cheesecake. It starts with a cookie dough base, another layer of decadent velvety cheesecake, chunks of cookie dough and its topped with a delicious ganache.

It’s really important that we use edible cookie dough for this recipe or it would end up being to doughy when mixing it with the cheesecake batter, it would cook differently and it would not be as good.
You can use any edible cookie dough recipe you want but here is our delicious edible cookie dough recipe made with brown butter. It’s so good you will never be able to stop eating it.
I recommend you bring the cookie dough to the sides for better results! (We used less cookie dough because we wanted to make more recipes with just one jar of it but for this recipe you could use the whole jar from our edible cookie dough recipe.)

INGREDIENTS
-make sure to use room temperature ingredients
-working the cream cheese with a spatula before mixing it with the rest of ingredients will help you get a smooth cheesecake with no lumps.
-in a small bowl mix the cornstarch with the milk powder and heavy cream to prevent lumps and then you can add it with the rest of ingredients.
BAKING
-bake at low temperature 160 C ( 320 F ) to avoid big cracks in the middle.
-don’t open the oven door unnecessarily or the cheesecake will sink in the middle.
-wrap the bottom of the outside of the cheesecake mold with aluminum foil to prevent spilling.
DECORATE
-before decorating pat dry the cheesecake with paper towel to absorb all the moisture.
-if you don’t absorb moisture from the cheesecake the chocolate will not stick.
-use the ganache right after you make it, try not to reheat it or you could curdle the ganache if you warm it up too much.
how to make it
1)we start by making the cookie dough (or buying it) and cover the base and sides of a greased cake pan.
2)to make the cheesecake batter in a small bowl we wanna mix cornstarch, heavy cream and milk powder until you have no lumps.
3)work the cream cheese with a spatula and mix it with the rest of the cheesecake ingredients.
4)pour the batter into the cookie dough.
5)add chunks of cookie dough and bake.
6)allow the cake to cool down to decorate.

1)First step, crust
To prepare this delicious cookie dough cheesecake begin by greasing all the inside of a pan and then add a layer of parchment paper on the base.
Pour the edible cookie dough into the base of the pan and spread it evenly pressing it down firmly to create a compact and even crust. You should spread it all over the bottom and sides for better results.

2)Second step, cornstarch
In a separate bowl combine the cornstarch, milk powder and heavy cream. Whisk this mixture vigorously until it reaches a smooth and creamy consistency ensuring that there are no remaining lumps of cornstarch in the batter.
3)Third step, eggs
In a clean and dry bowl, crack three eggs, add granulated sugar and whisk for about 1 minute to make sure both ingredients are well combined together.
4)Forth step, Rest of ingredients
Work the cream cheese with a spatula until it becomes smooth. Into the eggs you wanna add the rest of cheesecake ingredients.
Start by adding the cream cheese, condensed milk and greek yogurt. Then go ahead and add the cornstarch mixture and combine all the ingredients together using a whisk.
BAKE
5)Fifth step, oven
Preheat the oven to 160 C ( 320 F ).
Break small chunks of cookie dough and spread it all over the cheesecake. You can add all the cookie dough you want and bake at 160 C ( 320 F ) for about 1h 30 minutes. After that time insert a toothpick or skewer into the center of the cheesecake, if it comes out clean or with a few moist crumbs is done.
Allow the cheesecake to cool down at least 5 hours, its better to leave it in the fridge overnight.
GANACHE
6)Sixth step, ganache
Once the cheesecake is cold and ready to decorate you can start preparing the ganache.
Start by chopping chocolate into small pieces and place them in a heatproof bowl. In a pan you wanna warm up the heavy cream over medium heat until it starts to simmer. Immediately pour the heavy cream over the chocolate and stir with a spatula until the chocolate is completely melted. Let it cool at room temperature for a couple minutes but make sure to not let it harden.
WHIPPING CREAM
7)Seventh step, whipping cream
Start beating the heavy whipping cream with granulated sugar on medium low speed using an electric mixer and gradually increase the speed to medium high speed. It starts becoming frothy, then you will see soft peaks appearing on the cream and finally it will reach the desired consistency of stiff peaks. Don’t over-beat the cream!
