- 130 grams brown butter
- 180 grams dark chocolate
- 45 grams flour
- 45 grams cocoa powder

Step by step
brownie
1)First step, eggs
Place the mixing bowl on the stand mixer and attach the whisk attachment. Make sure the bowl is clean and dry. Crack the eggs for the brownie into the bowl and add the granulated sugar. Begin mixing at a low speed for about 30 seconds to break up the eggs. Gradually increase the speed to medium high. This will take about 6 minutes, or until they become white-ish.

2)Second step, chocolate and brown butter
While the eggs are in the stand mixer you can begin browning the butter. In a light colored sauce pan, melt the butter over medium heat, after a couple minutes it will start to foam, make sure to stir until the butter turns golden brown and develops a nutty aroma. It will take about 5 minutes.
In a clean and dry bowl, add the chocolate chips and then pour the browned butter on top to melt the chocolate.
3)Third step, dry ingredients
In a clean and dry bowl pour the dry ingredients: all purpose flour, cocoa powder and brown sugar. Mix until they are well incorporated and then pour it to the butter and chocolate mixture. Combine the ingredients together using a spatula.
4)Forth step, eggs into the mixture.
To begin take one third of the eggs and gently incorporate them into the chocolate mixture. Use a whisk or mixing spoon to blend them until the texture is well combined.
Add the remaining eggs to the bowl. This time use a spatula to fold them into the chocolate mixture. Be gentle during this process you want to combine the ingredients without over mixing as this can affect the texture of the final product. Mix only until you have no more streaks of egg stop as soon as everything is well blended.
5)Fifth step, brownie
now take your batter and pour it into a greased cake pan. Make sure to spread it evenly across the pan and set aside. Pre heat your oven at 160 C ( 320 F ).
