This homemade oreo ice cream sandwich is a delightful frozen treat made with a base of a crust (finely crushed oreo cookies and butter) and a delicious homemade oreo ice cream on the middle, topped with more of the biscuit crust. It’s really delicious and easy to make, it just takes some time.
In this recipe we are gonna explain all the steps with detail so you can easily understand and make it at home even if you have no experience making ice cream. It’s important to read all the post with detail.

Our mistakes and how we fix them
crust
- This was our first time making a sandwich ice cream using biscuits for the base so our crust wasn’t so stable and it kinda fell apart. We adjusted the recipe and added more butter to the crust so this doesn’t happen to you.
freezing
- We froze the ice cream for probably two days because we didn’t have time to finish the recipe so it was perfectly frozen but when you slice it starts to melt, specially on warm weather, so after cutting your oreo ice cream sandwich into 6 slices you wanna freeze them again individually for 30 minutes.
oreos
- We added too many oreos inside so it was too flavorful, we reduced the amount but you can adjust this by trying it before freezing it and if you want more oreo flavor you add more, keep in mind we left the custard in the fridge for 2 days to get all the flavors to fully develop but you don’t have to do this.

Ingredients
We are gonna separate this in three categories: crust, custard and whipping cream so you can easily understand. This is just a list of the ingredients and why we are using them, you are gonna find the recipe scrolling down some more.
crust
- Oreos: for the crust we are only gonna use the biscuit, save the filling for later.
- butter: we melt it and we use it ass a binding ingredient, helps to hold the crust together providing structure and stability.
custard base
- Condensed milk: contributes to the texture and makes the ice cream more creamy. Prevents the formation of ice crystals when the ice cream is freezing.
- eggs: to make the custard is really important, is gonna make our ice cream more creamy providing a velvety mouthfeel and enhances the flavor of the ice cream.
- granulated sugar: adds sweetness.
- milk: adds smooth texture to the custard. Helps you achieve the right consistency making sure the custard is not too thick.
- Oreos: we are using the filling to give the ice cream more flavor and we are also gonna chop some oreos to find some crunch inside of the treat.
whipping cream
- Whipping cream: adds rich and creamy texture to the ice cream. It creates a light and fluffy base, contributes to the smooth and creamy consistency. Its really important that you use 35% fat heavy whipping cream. The other % are not gonna work.
Tips
Making ice cream is easy, it just takes time.
- You are gonna use half of the crumbs at the begging and then you are gonna use the rest probably the next day, the crumbs are gonna be cold so it’s better if you microwave if for 30 seconds or until they feel wet again from the butter.
- once you have your custard ready, strain it placing a sieve on a clean and dry bowl, pour the custard through the sieve this will help you remove any lumps, then mix in the crushed oreos.
- cover the custard with plastic wrap this touching the product (skin to skin) immediately after mixing in the oreo cookies. Leave it in the fridge over night for better results, it will enhance the flavors and make it more delicious.
- don’t make the whipping cream until last moment, once the custard is cold and ready to use make the whipping cream and mix it together.
- whisk the cream until it reaches stiff peaks.
- use 35% fat heavy whipping cream the other ones don’t work for this.
- make sure to mix with just about one tablespoon of heavy cream the fist 4 times then you can progressively add more.
- allow it to freeze completely, slice it and allow the oreo ice cream sandwich to freeze again for 30 more minutes.
How to make it

To make ice cream sandwiches we start by making the crust, using finely crushed oreos and melted butter, mixing them together and pressing them into a baking pan. Use only half and leave the other half for later.
We need to make the base of the ice cream which would be the custard, making sure we mix it and cook it on low heat so it doesn’t create any lumps. Once that is ready you can go ahead and add the chopped oreos, mix it all together and allow it to cool down completely. Leave it in the fridge overnight if you can so all the flavors can fully develop.
Make whipping cream, it takes about three minutes and fold it into the custard. Do it slowly because the custard is gonna be really hard and the cream too soft if you mix it all in just one time the whipping cream its gonna lose its structure and its not gonna be as fluffy and creamy.
i mixed it in about 8 to 10 times, the first 4 times just add about a table spoon and then you can add more than that. Pour it into the crust and top it with the rest of crumbs you had to create a sandwich. Allow it to freeze completely. It should take you about 6 to 8 hours, leave it over night in the freezer.

RECIPE in cups and grams
INGREDIENTS:
for the crust
- 36 oreos (only de biscuit)
- 100 grams butter
for the custard base
- 250 grams condensed milk
- 2 eggs or 4 egg yolks
- 40 grams granulated sugar
- 95 grams milk
More
- 36 oreos (only the filling = white part)
- 10 oreos
- 500 grams heavy whipping cream
INSTRUCTIONS:
1)First step, separate oreo cookies
First you wanna start by making the crust. Twit your oreos in opposite ways and separate them, scrape the filling using a knife and put it in a separate bowl. You wanna have in a bowl the biscuits without the cream and in another smaller bowl the filling that we are gonna use later.
2)Second step, crush oreos
To crush the oreo cookies you can do it using a food processor or blender, or you can pour all the cookies inside of a ziplock bag, close it making sure there’s no air inside and then using a rolling pin you wanna crush them until they achieve a fine texture,
3)Third step, mix with butter
Melt the butter in the microwave for about 30 seconds or until melted and then pour it into the crushed cookies. Make sure the butter is not too hot when you pour it into the cookies.
if you don’t have a microwave you can melt the butter in a pan on the stove. Combine the melted butter with the crumbs, stir until they are evenly coated with the butter and the texture resembles really wet sand.
4)Forth step, pan
Grease your pan and cover it with parchment paper, this is gonna help you remove the ice cream when it’s done without breaking.
Transfer half of the Oreo crumb mixture into your pan of choice, we are gonna use the other half for the top of the sandwich. Press the crumbs into the pan using a glass. Leave it in the freezer.
5)Fifth step, custard
In a clean and dry bowl, crack two eggs and mix them with the oreo filling, its gonna have a lot of lumps so i recommend you use a blender.
6)Sixth step, custard
In a pan, pour in the condensed milk, granulated sugar and milk. Bring it to the stove on low heat and stir until the sugar dissolves and its all the same texture. You wanna bring this mix to boil.
7)Seventh step, custard
Once the milk mixture starts slowly boiling, turn off the heat. You wanna pour the hot mixture into the eggs and mix at the same time. If you can get someone to help you on this step is gonna be easier but if its just one person making the ice cream pour the hot milk slowly using a ladle and mix. Repeat until you have poured all of it into the eggs.
8)Eight step, custard
Pour this mixture into the same pan you used to boil the milk and keep it on low heat, make sure to stir constantly without stoping. After a couple minutes you’re gonna see how the liquid changes consistency and it thickens.
9)Ninth step, strain
To get a smoother texture and without any lumps you wanna strain it through a sieve.
Chop the oreos, pour them into the custard and mix. Cover it with plastic wrap making sure the plastic wrap touches the custard.
10)Tenth step fridge
Leave the custard in the fridge until its cold but its so much better if you leave it in the fridge overnight this will help enhance the flavors.
once its cold and ready to use, make whipping cream: in a clean and dry bowl whisk the heavy cream until stiff peaks, you can also use a stand mixer with the whisk hook attachment. It usually takes about three minutes but it may take a little longer.
11)Eleventh step whipping cream
You wanna start by adding one tablespoon of the cream into the custard and mix, repeat this same process about four times. Once you see the custard being more creamy you can add more of the cream.
12)Twelfth step, pan
Pour all of the ice cream into the crust and smooth it out using a spatula.
13) thirteenth step, crumb
Microwave for about 30 seconds the rest of crumbs and pour them into the ice cream, Press the crumbs into the ice cream using a glass. Let the ice cream chill in the fridge overnight.
14)fourteenth step, eat
slice the ice cream into 6 pieces and then freeze them individually for about 30 minutes before eating.
