- 2 eggs
- 250 grams milk
- 80 grams all purpose flour
- 20 grams cocoa powder
- 40 grams granulated sugar
- 25 grams melted butter
filling
- 170 grams heavy whipping cream
- 40 grams granulated sugar
- 8 crushed oreos
decorate
- 1 teaspoon cocoa powder
- mini oreos
Instructions
1)First step, dry ingredients
- To make the crepe batter you can start by grabbing a clean and dry bowl. Pour all purpose flour, cocoa powder and granulated sugar. Mix the ingredients using a whisk until well combined.
2)Second step, wet ingredients
- Crack two eggs into the flour bowl and add just a splash of warm milk to be able to mix the ingredients.
3)Third step, wet ingredients
- Mix vigorously until you can’t see more flour lumps. Once the batter is smooth you can add the rest of warm milk and melted butter. Mix again the crepe batter until all the ingredients are well combined, the batter should be thin and runny.
4)Forth step, cook crepes
- Heat a non stick pan over medium heat. Lightly grease the pan with some butter and spread it with paper all over the pan to prevent the crepe from sticking.
- Once the pan is hot, pour a small part of the batter and immediately lift and tilt the pan in a circular motion to spread the batter evenly and thinly across the pan.
5)Fifth step, cook
- Cook the crepes only from one side for about 2 to 3 minutes, you will know its already cooked because it can be lifted easily with a spatula. Transfer the crepe into a plate and allow them to cool down.
6)Sixth step, whipped cream
- Start by pouring the whipping cream in a clean and dry bowl and begin beating the cream on low speed with a stand mixer (use the wire whisk attachment) or you can also use an electric mixer. Once you start seeing bubbles in the cream you can add the sugar.
- Continue beating the cream on medium high speed until stiff peaks. Make sure to not over-beat the cream!
7)Seventh step, crepes!
- Lay two crepes flat slightly overlapping each other, add whipped cream on the center and spread it leaving enough distance on the edges. Chop oreos and add them on top. Now fold the sides towards the center creating a rectangular shape with all the filling inside
8)Eight step, burrito
- Now you can roll it like a burrito holding the sides as you roll it. Make sure to do it tightly from one end to the other.
9)Ninth step, decorate
- Let the oreo crepe rolls chill in the freezer for about 5 minutes and decorate however you want to! I added some cocoa powder on top, mini oreos and it was absolutely perfect! Try this recipe and let me know how you like it! Feel free to leave a review!! Enjoy!
