- All-purpose flour – Acts as the base for your pancake batter, providing the right texture for light and fluffy pancakes without being too dense.
- Milk – Adds moisture to the batter, resulting in tender and soft pancakes. (You can substitute with plant-based milk.)
- Eggs – Act as the binding agent, giving structure to the pancakes.
- Granulated sugar – Balances the flavors and adds sweetness.
- Baking powder – The leavening agent in this recipe, helping the pancakes rise.
- Melted butter or oil – Adds richness and tenderness. (We use a neutral oil like sunflower oil.)
- Nutella – Provides a rich chocolate-hazelnut flavor that pairs perfectly with soft, fluffy pancakes. (No need to stick to the same brand—feel free to try other chocolate spreads or even melted chocolate!)

How to stuff Japanese Dorayaki pancakes with Nutella
Stuffing dorayakis with Nutella is super easy. We all know Nutella or chocolate spread is not the typical filling for Japanese pancakes, but who doesn’t love a good Nutella dessert? When we cook our pancakes in the pan, we’re gonna make them thin and make sure they’re cooked thoroughly – try only cooking them on one side and then remove and keep on a flat surface with the golden brown part touching the surface.

Add a big spoonful of Nutella and add another pancake on top. You can leave the filling inside and close the edges by pressing with your fingers, or you can just leave it with the Nutella showing.

How to make pancakes to not stick to the pan
Have you ever struggled with pancakes sticking to the pan? Here’s how to fix it: First, you need a non-stick pan – if yours is all scratched up, the pancakes will probably stick and make a mess. Add just a little oil and spread it with a paper towel so the base is lightly coated. Then cook them on low heat with the lid on.
Best tips for the best Nutella stuffed Japanese pancakes
Making Nutella dorayakis is super easy, but I’ll give you a couple tips to make the process easier:
- Use a non-stick pan—it makes all the difference!
- Don’t overmix the pancake batter, or it’ll turn out dense.
- Cook the pancakes with a lid on, over low heat, so they cook evenly and get that perfect uniform color.

Step by step to make Nutella dorayakis
1. Start by grabbing a mixing bowl. Crack two eggs and beat them with a whisk. To that, you’re gonna add the milk and sugar, and mix again.
2. Add the oil and baking powder, then mix.
3. Last, add the flour and mix again—but be careful not to overmix, as the pancakes can become dense if you do.

4. Heat a pan and add a few drops of neutral vegetable oil or butter, spreading it across the surface (a paper towel works—we don’t want too much oil). Once the pan is warm, pour in some batter (keep it thin!), cover with a lid, and cook on low heat. When you see bubbles and the edges look set, you can remove it. If you prefer, flip the pancake to cook the other side briefly.

5. To assemble: Place a spoonful of Nutella in the center of one pancake, top with another, press gently, and enjoy!
