1)you can freeze the Nutella so its easier to put on the middle later and you dont make much of a mess
2)allow your cookies to set on the fridge for 20 good minutes at least, if you do that you can omit one tablespoon of flour.
3)use brown butter to make cookie recipes
4)you can freeze them before baking and after baking.
- Before: you can stop on the step before baking them and freeze them in the baking pan, then take them out and put in a sealed container, you can bake them without unfreezing them.
- After: underbake the cookies, freeze and then put on the oven or air fryer right before eating.
Chewy or crunchy
There’s two different type of person in this world, the ones who like their cookies crunchy and over baked and the ones who like them super chewy and kinda more like underbake.
I personally enjoy my cookies when they are over baked, super crunchy and im not gonna lie, i like them a little bit burnt. If you are like us, you should add more baking time to this recipe. If you want them more chewy you can always rest baking time.

Variations
You can actually use this recipe for so many more cookie recipes, i would recommend you if you take out from this recipe about 1 or 2 tablespoons of flour if you don’t do the Nutella in the middle.
Chocolate chips cookies, with walnuts. Peanut butter cookies or even mint choco cookies.
If you like more chewy cookies, use more brown sugar and less granulated sugar on this recipe.

Brown butter
When we make brownies or cookies we always choose to make brown butter, its super simple to make and it will change the flavor so much they turn out incredibly more amazing.
You just want to put the butter into a cooking pan on medium low heat, keep in mind it will brown really fast so keep an eye on it. If it turns really dark brown its burnt and it will give a horrible flavor to the cookies. Here is the color we like for it.


RECIPE in cups and grams
INGREDIENTS:
Dough for 6 cookies
- 100 grams brown sugar (0.45 cups)
- 30 grams granulated sugar (2.5 tablespoons)
- 85 grams butter (3 oz)
- 200 grams all purpose flour (1.6 cups)
- 1/4 teaspoon baking powder
- 1/2 tablespoon cornstarch
- 1 eggs
Filling
- 80 grams m&m’s (2.82 oz)
- 35 grams chocolate chips (1.23 oz)
- 60 grams Nutella (3.24 tablespoons)
INSTRUCTIONS:
1)First step, brown butter
First of all you want to put the butter in a cooking pan at medium low heat, allow it to start getting brown, keep in mind that its gonna be pretty fast and we don’t want to burn it, at all. Here is the perfect brown butter color hehe if you do more it may be burnt.

2)Second step, sugars
We are adding granulated sugar and brown sugar, if you want them to be more chewy add more brown sugar and less of the granulated.


3)Third step, mix
Mix, then add one egg and the cornstarch and you want to mix again. You can use a whisk




4)Forth step, sift flour
You want to sift the flour and then add the baking powder, mix with a spatula because if you use a whisk you will probably break it.



5)Fifth step, Yummy stuff
It’s time to add the m&ms and chocolate chips, you can literally use as many of it as you want. Mix carefully so the m&ms don’t break.


6)Sixth step, shaping
Grab a piece of cookie dough, add the Nutella on the center and add more dough on top, roll into a ball and add more chocolate chips and m&ms on top. Repeat until you don’t have any more cookie dough.


7)Seventh step, Baking
Bake at 220C or 428 F from 8-12 minutes, depending on how you like your cookies, more crunchy or chewy.
