Ingredients

  • 3 + 1/4 cups bread flour ((400 grams))
  • 4.94 oz water ((136 grams))
  • 5 Tbsp butter ((70 grams))
  • 1 1/2 eggs
  • 1 Block fresh yeast (25 grams ((1 1/2 tbsp))
  • 1/2 Tsp salt

Egg wash

  • 1 egg

Instructions

  1. put all the dough ingredients in a bowl
  2. knead for 20 minutes
  3. allow the dough to proof for 1h30 minutes
  4. cut the dough into 4 sections about 170 grams each
  5. Fold like on the pictures
  6. allow the dough to proof for 25 minutes
  7. paint with egg
  8. bake at 0 C 392 F for about 34 minutes
