  • 100 grams biscuits
  • 50 grams melted butter

cheesecake filling

  • 3 eggs
  • 450 grams cream cheese
  • 200 grams heavy whipping cream
  • 160 grams condensed milk
  • 150 grams granulated sugar
  • 40 grams cornstarch
  • 1 tablespoon vanilla extract

blueberry jam

  • 250 grams blueberries
  • 100 grams sugar
  • Half lemon

Instructions

1)First step, crust

  1. Begin by placing your biscuits in a blender or food processor. Pulse the biscuits until they become fine crumbs. If you prefer, you can also place the biscuits in a plastic bag and crush them with a rolling pin./
  2. Next, transfer the biscuit crumbs into a mixing bowl and pour in the melted butter. Ensure the butter is not too hot as it can alter the texture of your crust. Mix the crumbs and butter throughly until the mixture resembles wet sand.

2)Second step, press the crust into your greased baking pan

  1. Now, press the biscuit mixture firmly into the bottom of your greased baking pan. Use the back of a measuring cup or your fingers to evenly distribute and compact the crust. This step is crucial for ensuring that your crust holds together after baking, once pressed down place the pan in the refrigerator to chill while you prepare the cheesecake filling.

3)Third step, create the cheesecake filling

  1. Now that your crust is chilling, it’s time to make the creamy cheesecake filling. In a mixing bowl, combine room temperature cream cheese and condensed milk. Using a whisk, mix these ingredients together until smooth and creamy. It’s important that the cream cheese is at room temperature as this prevents lumps in your filling.
  2. Next, add the eggs, granulated sugar, vanilla extract, cornstarch, and heavy whipping cream to the mixture. Whisk everything together for a few minutes until fully combined and silky smooth. If you notice any lumps, feel free to blend the mixture in a blender for a few seconds to achieve that perfect creamy consistency.

4)Forth step, preheat the oven

  1. Once your cheesecake filling is ready, pour it over the chilled biscuit crust in the baking pan. Make sure to spread it evenly using a spatula. Preheat the oven at 160 C ( 320 F )

5)Fifth step, prepare the homemade blueberry jam

  1. While the oven is preheating, begin preparing the blueberry jam. In a medium saucepan combine fresh blueberries, sugar and lemon juice. Cook the mixture over medium heat, stirring constantly to prevent sticking and burning. Allow the blueberries to break down and thicken, this should take about 10 to 15 minutes.
  2. Once thickened remove the saucepan from the heat and set aside.

6)Sixth step, bake

  1. Spread 1/4 part of the blueberry jam onto the cheesecake. Place the baking pan in the preheated oven and bake for about 1h to 1h and 20 minutes. To check doneness insert a toothpick into the center of the cheesecake. If it comes out clean or with a few moist crumbs, your cheesecake is ready.
  2. After it has finished baking, remove it from the oven and let it cool completely at room temperature.

7)Seventh step, assemble and chill the bars

  1. Once it has cooled, spread a generous layer of the homemade blueberry jam over the surface of the cheesecake, ensuring even coverage. The combination of the creamy cheesecake and sweet blueberry jam creates a perfect balance of flavors.
  2. Now, cover the baking pan with plastic wrap and refrigerate the cheesecake for at least 6 hours or preferably overnight.i chilling time allows the flavors to meld beautifully and ensures the bars set properly.

8)Eight step, slice, serve and enjoy

  1. It’s time for you to slice your irresistible blueberry cheesecake bars into squares or rectangles.
