Instructions
first step, prepare the dough
- To make the perfect base for your duck-shaped pizza, start by placing the dry ingredients into a mixing bowl. Add all-purpose flour, bread flour, turmeric for a vibrant yellow hue, and a pinch of salt. Crumble the fresh yeast and either sprinkle it directly into the mixture or dissolve it in water before adding. Pour in the water gradually, followed by oil or softened butter.
step two, knead the dough
- After combining your ingredients, knead the dough thoroughly using a stand mixer with a dough hook attachment. This process should take about 10 minutes, resulting in a smooth and elastic texture.
- Once the dough is ready, separate about 20 grams from the main portion. Add orange food coloring to this smaller piece and knead by hand or in the mixer until the color is fully incorporated. This orange dough will be used later to add vibrant details to your duck pizza, bringing it to life with creative and colorful touches!
step three, first proof
- Transfer the kneaded dough into a greased bowl, leaving some space between the sections of dough to prevent them from touching each other as they rise. Cover the bowl with a damp cloth or plastic wrap and allow the dough to proof in a warm place for about 1 hour. During this time, the dough will double in size, becoming airy and soft. This step is crucial for achieving that light and fluffy texture in your duck-shaped pizza dough.
step four, shape the dough
- Once your dough has proofed and doubled in size, it’s time to shape it for your duck pizza. Start by separating the yellowish dough into 4 equal sections, each weighing around 74–76 grams. Shape each section into a round ball or the desired shape for the body of your duck pizza, as shown in your reference picture.
- Next, take the orange dough you prepared earlier and divide it into 12 tiny, circular balls. These will be used to form the duck’s eyes, adding the perfect finishing touch to your creative pizza design!
step five, shape the dough
- Carefully press down on the center of each dough ball to create the duck’s stomach, ensuring a gentle and even indentation. Once you’ve shaped the body, take the small orange dough balls and use them to form the duck’s feet and nose. To attach them, dip your finger into a bit of water, dry off the excess, and press gently where you want to attach the features. Be careful not to use too much water, as it can make the dough too slimy.
- After shaping and attaching the feet and nose, let the dough rest for 10 more minutes in a warm place, covered with a damp cloth or plastic wrap. This second proofing is crucial for achieving a smooth, soft texture and ensuring the dough expands perfectly. Skipping this step could result in a rough, uneven texture, so don’t skip it!
step six, bake the pizza
- Now that your duck-shaped pizza dough is ready, it’s time to get creative! Decorate your pizza with your favorite toppings.
