Do these amazing and easy copycat cosmic brownie cookies taste the same as the original ones? Probably not because I’ve never tried them but I promise you they’re as good and to add on that they’re homemade.
Super easy to make, they have the most basic ingredients ever, it won’t take you a lot of time and they’re perfect to make with the small ones of the house. Quality time together with your family + enjoying a delicious treat.

Fail but not so fail
This recipe is kind of a fail because we filled the muffin tins way to much so we had to do the sacrifice of eating half of each to make it look all even, but we can all avoid this with filling less than half of the tin. The brownie is gonna expand a bit on the oven so make sure to do that to have more brownies.
The perfect pan
This is not sponsored at al but you guys this brand has the best pans, nothing sticks to them. We literally just took the brownies out of the tin by grabbing the top of it, NO DAMAGE DONE AT ALL. The brand is Russell Hobbs and Maybe you cannot find it in your country but if you do, think on investing into one. They’re not even expensive.
Even if you don’t have a perfect pan, or if you do you should still make sure to prepare the muffin tin to make it non stickable? Guys i don’t know the word but if you don’t want your food sticking to the pan, spread some butter, margarine or oil into the pan (all the places where the product is gonna be baked) and now add some flour on top and spread it while moving the pan around.

Ingredients
YOU NEED
- AP flour
- Dark chocolate
- Brown butter
- Granulated sugar
- Eggs
- Cocoa powder
This recipe is gonna give you 12 super amazing copycat cosmic brownie cookies if you fill half the pan not to the top, but if you wanna have them super huge and big even bigger than ours you’re gonna have 6.
Baking:
For this recipe you are gonna need to use your oven. If you are a minor or you are scared of the ovens like i am ask for the help of an adult and they are gonna happily help you. In our case Maia will always be the one using the oven because I’m way too scared of it.
You wanna bake them at 180 C or 356 F for about 5 minutes and if you want to fill the pan to the top bake them for 10-13 minutes, depending in how you like your brownies.
Decorate:
When decorating this copycat cosmic brownie cookies you want to make a ganache, using some dark chocolate and heavy whipping cream, you don’t need to mesure.
Cooking pan on the stove and another one on top. Melt the chocolate and heavy whipping cream, don’t add way too much cream or the chocolate its never gonna harden. Make sure the color looks like a couple tones less darker than the chocolate you are using.
For the colored things on top, we used m and ms but you can use colored sugar, sprinkles or whatever colored and edible food you can find. If you don’t wanna add artificial colors you could also cut fruits into small pieces and add them on top.
We are adding the colored chocolate when the ganache is still melted so it will stick! Then you can let it sit in the fridge for a couple hours or eat it right away!
Eggs
The brownies process is a lot different for everyone, they’re people who likes to use the eggs right away without doing anything to them. I personally like to beat them until they are white and have triplicated on size. You can always chose to do it or simply not, but when you have an electric hand mixer it literally takes you 5 minutes to get the eggs to that point.
Brown butter
For this recipe we are using brown butter but you can chose if you want to do this step, some people doesn’t really like to put the butter on high temperatures due to its bad effects to your persona but if you think of it its gonna reach high temperature levels on the oven too.
To make brown butter you just put the butter on a pot on low medium heat, always keeping an eye on it and i like to stir i don’t know if that makes a difference but i mean it does make me feel better. I always leave it until it’s golden brown and it’s done. It’s gonna make a huge impact on your brownies so if you want to try it, you should.
RECIPE in cups and grams
INGREDIENTS:
Brownie:
- 90 grams (3.17 oz) dark chocolate
- 75 grams (2.65 oz) brown butter
- 85 grams (0.43 cup) granulated sugar
- 2 eggs
- 35 grams (4.67 tbsp) AP flour
- 15 grams (3 tablespoons) cocoa powder
Decoration
- Heavy whipping cream
- Dark chocolate
- Colored chocolate
INSTRUCTIONS:
1)First step: eggs
Firstly, we are cracking two perfect eggs. You can use a whisk or an electric hand mixer for this step and you wanna beat them. You will see in the picture the difference on the colors and you should add the sugar to the eggs when they start to get a bit white and you can see the trace of the whisk on the beaten eggs.
Make sure you don’t stop for too long when adding the sugar and start whisking again so they don’t flop. If by any chance you forget to add the sugar on this step or its way too late, they are not gonna peak that much, but its fine you can just add the sugar later when melting the chocolate.
2)Second step: brown butter
Like we said before, this first step is kinda optional. You wanna get your butter all brown and delicious. Add your butter stick to a pan on medium low heat, stir once in a while and always keeping an eye on it because it can go from brown to burnt real quick.
Now at this point since the butter is really hot you can use it to melt the dark chocolate. If you see that the chocolate didn’t melt completely just add it back to the pan and to the stove.
3)Third step: dry ingredients
We are adding our dry ingredients (cocoa powder and all purpose flour ) to our melted butter and chocolate mix. Make sure to mix everything really well because we don’t want any flour lumps on this batter.
4)Forth step: mix
Now this step, you need to do it fast and slow at the same time.. you want to do this right away because if its cold the chocolate and butter are gonna start to harden, and we want it as soft and melted as possible.
You want to add first 1/4 part of the eggs into the chocolate batter and mix carefully with a spatula. Make sure to not use a whisk because if you do so the eggs are gonna flop. When you see it almost completely mixed you can go ahead and add 1/2 the batter and repeat the same process. We are doing this 3-4 times until you have all mixed together.
5)Fifth step: baking
Make sure to spread butter, margarine or oil to the gaps from the pan and then we are adding flour and moving the pan around until you see every part of it coated with it. Make sure to only fill a half the muffin gaps, do not fill as much as we did or you are gonna end up having muffins instead of brownies.
Bake it in your oven at 180 C or 356 F for about 5 minutes to have fudgy brownies. You can keep it for more time if you want like we did because we were scared they were not gonna be that easy to remove from the pan. But you are safe to bake them less time for some extra yumminess
6)Sith step: decorate
We had to cut all the top of our brownies because they were way too big (that’s why you should add less batter on each)
Now you can make a ganache using heavy whipping cream and melted chocolate, you don’t have to weight it. Just melt the chocolate with a bit of heavy cream and then keep adding more until it feels right. We run out of our first ganache that’s why you can see different colors.
You can also just melt chocolate and add it to the top without the cream, you can always chose what you prefer.
Put some colored chocolates on top, use as many as you’d like for you copycat cosmic brownie cookies. You should add them right away when the chocolate is still hot so it sticks.
7)Seventh step: chilling
allow your copycat cosmic brownie cookies to chill in the fridge for at least 2 ours so the chocolate on top is a bit more hard and you can remove it from the baking tin without getting choco all over your hands or you could also eat them right away super warm and delicious.
