Description

Super fluffy pancake stuffed with the irresistible sweetness of cookie dough.


Ingredients

Pancakes

  • 1 egg
  • 50 grams granulated sugar
  • 125 grams milk
  • 1 1/2 tablespoons seeds oil
  • 135 grams all purpose flour
  • 1 teaspoon baking powder

  • 4 tablespoons cookie dough
  • oil for cooking
  • 3 tablespoons Chocolate spread (decorate)

Instructions

1)First step, cookie dough

  1. Start by making or buying edible cookie dough

2)Second step, flatten

  1. Flatten the cookie dough with a rolling pin or your hands and make a thin disc shape, place it in a baking pan lined with parchment paper. Leave it in the freezer while we make the pancake batter.

3)Third step, dry ingredients

  1. To make our pancake batter, grab a clean and dry bowl and pour all purpose flour, baking powder and granulated sugar. Mix with a spatula or whisk until all the dry ingredients are well combined.

4)Forth step, wet ingredients

  1. In a separate plate crack one egg and then pour it into the bowl with the rest of ingredients, (this is important because so many times the eggs re rotten and it would ruin our pancake batter completely, its better to be safe just by doing this extra step).
  2. Pour in half of the milk and mix with a spatula, if you pour the milk in two different times you will not have any flour lumps on your batter.

5)Fifth step, oil

  1. You can now incorporate the remaining of the milk and oil and gently mix again until you achieve an smooth batter but make sure to not over-mix.

6)Sixth step, pan

  1. To start cooking the pancakes, heat up a non stick pan on the stove, add a couple drops of oil and spread them with paper towel all over the surface.
  2. Once the pan is warm enough, pour about half of the pancake batter onto the pan, cover with a lid and cook on low heat until you start seeing some bubbles on the pancake. Now you can add the frozen cookie dough disc. Gently press it down a little so it sinks a little.

7)Seventh step, cook

  1. Pour the remaining of the pancake batter and cover with the lid. Cook on low heat until its almost cooked. You should see bubbles forming on the pancake and the sides of it being fully cooked.

8)Eight step, flip pancake

  1. Now its time to flip our cookie dough stuffed pancake over to the other side. Use a big spatula to carefully lift the pancake and quickly flip it so that the uncooked side is facing down. Cook the pancake until it’s fully cooked.

9)Ninth step, decorate and eat.

  1. Now you can be creative and decorate the pancakes however you want to. We used chocolate spread for the center, some more cookie dough and extra chocolate chips to enjoy our cookie dough stuffed pancakes. Make sure to eat them when they’re still warm.
