brownie
1)First step, eggs
Cream the eggs and sugar, in a mixing bowl whisk together 2 eggs and granulated sugar until the mixture becomes light and fluffy. Use a whisk, an electric mixer or stand mixer to beat the mixture vigorously until it becomes pale, thick and frothy. This step is crucial as it incorporates air.
2)Second step, brown butter
In a sauce pan melt the butter over medium heat. Allow it to melt completely, then continue to cook stirring occasionally until the butter takes on a rich, golden brown hue and releases a nutty aroma. This process enhances the flavor and adds a deeper complexity to the brownie.
3)Third step, melt chocolate
Place the dark chocolate in a heatproof bowl. Pour the hot brown butter over the chocolate. Let it sit for a few moments to allow the heat from the butter to melt the chocolate, then stir until the mixture is smooth and fully combined.
4)Forth step, dry ingredients
Add all the dry ingredients to the melted chocolate with butter, start by adding all purpose flour, cocoa powder, cinnamon and ginger ground. Mix the ingredients until just combined.

In a separate bowl mix the dry ingredients, all purpose flour, bread flour, baking powder, brown sugar, pinch of salt, ginger ground, cinnamon, nutmeg. Once the dry ingredients are mixed incorporate the brown butter, molases and half an egg. Then, cover it in plastic wrap and allow it to set in the fridge for 30 minutes if you have time.
Roll out the cookie dough using a rolling pin and cut the gingerbread mans.

8)Eight step, Bake
Add more chocolate chunks and the gingerbread man cookies on top of the Christmas brownies (VIDEO). Place the ramekins in a baking pan and bake them in the preheated oven for about 15 – 20 minutes, about two minutes before removing the ramekins from the oven, add marshmallows on top. Return to the oven until the marshmallows are slightly melted and golden.
