Cookie dough

  • 170 grams brown sugar
  • 56 grams granulated sugar
  • 170 grams brown butter
  • 2 eggs
  • 310 grams flour
  • 30 grams cornstarch
  • 1 tablespoon vanilla
  • 1/2 teaspoon baking soda
  • 200 grams chocolate chips

Brownie

  • 4 eggs
  • 200 grams granulated sugar
  • 100 grams brown sugar
  • 260 grams brown butter
  • 360 grams dark chocolate
  • 90 grams all purpose flour
  • 90 grams cocoa powder
  • 210 grams chocolate chunks
  • 100 grams white chocolate
  • 200 grams raspberries (fresh or frozen)

Instructions

1)First step, sugar

  1. To make brookies we begin by preparing the cookie dough. The first step is to brown the butter. Place your butter in a pan and melt it on medium heat, it will begin to foam as it melts and then its gonna start to turn golden brown color and a nutty aroma. Be careful not to burn it it should turn a golden color not dark brown.
  2. In a mixing bowl you wanna pour in your brown butter, granulated sugar, vanilla extract, brown sugar and mix. Crack two eggs and mix them with the sugar.

2)Second step, dry ingredients

  1. Now you can add the rest of ingredients, all purpose flour, cornstarch, baking soda. Mix all the ingredients without over-mixing using a spatula.

3)Third step, chocolate chips

  1. Add chocolate chips and mix again. Pour the cookie dough into a greased baking pan and spread it to cover the bottom and the sides making sure to press the dough evenly into the bottom of the pan and up the sides to create a sturdy base. Put it in the fridge.

4)Forth step, chocolate

  1. To make the brownies we wanna start by making our brown butter.
  2. Place your butter in a pan and melt it on medium heat, it will begin to foam as it melts and then its gonna start to turn golden brown color and a nutty aroma. Be careful not to burn it it should turn a golden color not dark brown.
  3. Once your butter is brown you can add the chocolate and mix until all of it its completely melted.

5)Fifth step, eggs

  1. Crack the eggs into a mixing bowl and use a whisk or electric whisk to beat them, whisk vigorously to incorporate air into the eggs. Continue whisking until they become pale and slightly frothy. Once the eggs have changed to a white ish color and have slightly frothy texture add the sugar while whisking continuously. Whisk more until you see them change to a even whiter color.

6)Sixth step, cocoa powder

  1. You can add the dry ingredients to the chocolate, start by adding granulated sugar, brown sugar, all purpose flour and cocoa powder, mix until everything is well combined.

7)Seventh step, eggs with chocolate

  1. Add 1/4 part of the eggs to the chocolate and mix carefully using a spatula. Then you can add half of the chocolate to the eggs and mix, once its almost fully incorporated you can add the rest of the chocolate and mix again.

8)Eight step, chocolate chunks

  1. You can cut the chocolate to make smaller pieces or you can use chocolate chips for your brownies. Pour the chocolate into your brownie batter and mix with a spatula.

9)Ninth step, bake

  1. Pour the brownie batter into the cookie dough, add raspberries and white chocolate and bake at 170C (338F ) for about 40-45 minutes. After 40 minutes check for doneness by inserting a wooden toothpick into the center. If the toothpick comes out wet and dirty it means it needs more time to bake. Continue baking until the toothpick comes out with a few moist crumbs.
