A traditional tiramisu recipe really popular all over the world, originally made in Italy. Topped with cocoa powder and served cold.

- 400 grams mascarpone cheese
- 160 grams granulated sugar
- 3 eggs
ladyfingers
- 24 ladyfingers
- 300 ml cold coffee

- 2 tablespoons cocoa powder
- 10 grams dark chocolate
Instructions
1)First step, coffee
- We need to start by making the coffee and allowing it to cold down so we can use it for later. If you can leave it in the fridge or room temperature while you prepare the rest of ingredients is perfect.
2)Second step, eggs
- To make this authentic tiramisu we will need to carefully crack three eggs into a big bowl. Once the eggs are in the bowl if you have an electric mixer to beat them until they become light and fluffy as you continue to beat the eggs you will notice how they start to turn white.
- This step is very important it helps incorporate air into the eggs. If you don’t have electric mixer you can use normal whisk or you can do it in a stand mixer.
3)Third step, granulated sugar
- Once the eggs have started to turn white you can add granulated sugar to the bowl, while you add the sugar you can continue beating the eggs with the electric mixer. The goal is to fully incorporate the sugar into the eggs until they get a color similar to white paper.
4)Forth step, mascarpone
- You’ve reached the perfect consistency for the eggs and now you wanna work the mascarpone cheese.
- Take a separate clean and dry bowl and add the Mascarpone cheese to it. Use a spatula or the same electric mixer to work the mascarpone until it becomes really creamy and smooth. This step is gonna help us incorporate the mascarpone to the eggs.

5)Fifth step, mix the eggs with the mascarpone
- To incorporate the eggs into the mascarpone cheese we will do it in three separate parts.
- first start by adding 1/3 part of the eggs into the mascarpone, use a whisk to gently mix the mixture together.
- you can now switch for a whisk to a spatula. Add 1/2 off the eggs into the mascarpone and carefully mix it with the spatula.
- gently fold in the rest of beaten eggs we have into the mascarpone mixture.
- For this authentic tiramisu folding instead of whisking is gonna help us maintain a light and airy texture to the dessert.
6)Sixth step, Soak ladyfingers
- Soak the ladyfingers into the cold or room temperature coffee for just about 2 seconds, making sure they don’t absorb too much coffee so they don’t become too mushy and soft and place them in a pan.
7)Seventh step, layer of mascarpone
- Add 1/2 of the mascarpone mixture on top of the ladyfingers, smooth it out and add grated chocolate on top. If you’re doing this on summer maybe the chocolate will melt on your fingers so you can dust some cocoa powder on top instead.
- Soak the ladyfingers again into the coffee and place them on top of the mascarpone (and chocolate) following the same direction.
8)Eight step, mascarpone cheese
- Add the rest of the mascarpone mixture on top, smooth it out and cover it with plastic wrap. Allow it to sit on the fridge overnight.
9)Ninth step, Cocoa powder
- Before serving dust with cocoa powder and serve cold. This recipe should give you about 6 portions or 4 if you enjoy bigger servings.
