To make this recipe we are gonna mix first the dry ingredients in a bowl and then in a separate bowl mix the liquid ingredients, then we can combine them together.
- Granulated sugar: it adds sweetness and enhances the overall flavor profile of the muffins. Helps create a tender texture and a perfect golden color. You can use brown sugar, caster sugar or powdered sugar if you want.
- orange zest: its not necessary but the flavor of the orange zest provides a pleasing contrast to the deep rich flavor of the chocolate making it perfect.
- all purpose flour: essential ingredient, provides structure, texture and helps the batter to hold together.
- baking powder: helps the batter rise and gives the cake a light and fluffy texture.
- Eggs: Make sure to use fresh eggs, they provide structure and helo bind the ingredients together. They also add moisture to the cake.
- oil: It’s gonna add moisture to the muffin batter,, resulting in a moist and tender texture, it helps to prevent the muffins from drying out during the baking process. Oil helps keep moister longer than when you use butter.
- milk: use whole fat milk, it adds a subtle sweetness and enhances the taste of the other ingredients.

- We don’t wanna over mix the batter.
- In one bowl mix all the dry ingredients and in a separate bowl the liquids. Make sure to beat the eggs until they’re smooth and then mix both together.

- First we bake them at 410F so they grow they rise in size and they get some color then we drop the temperature to 340F so they finish cooking.
- check if they are fully cooked inserting a toothpick into the center of the cake, if it comes out clean or with crumbs is done. If there is batter on the toothpick the cake needs more time to bake.
how to make them
Pre heat the oven at 410 F / 210 C after weighting all the ingredients.
First we start by rubbing the orange zest with the sugar for a couple minutes, once this is ready you can add the rest of dry ingredients, flour and baking powder and mix with a whisk.
in a separate bowl crack five eggs and add the oil and milk, mix until its smooth, if you want you can use a sieve to ensure a smooth and luscious texture for your mixture. Pour the dry ingredients into the liquids and mix. Add the chocolate.
Spoon the batter into a prepared muffin tin, this recipe gives you about 15 chocolate chip muffins. Sprinkle some sugar on top before baking.
Bake them at 410 F for about 13 minutes and then lower the oven temperature to 340 F /170 C and bake for 5 more minutes.

1)First step, orange zest
I like to start my recipes by weighting all the ingredients first so the process is more fun and easier. Preheat the oven at 410F or 210C
In a bowl add the granulated sugar and the zest of one orange, rub the zest with the sugar for about two minutes using your hands.
2)Second step, dry ingredients
Sift the flour using a flour sifter or sieve to remove any lumps and add it to the sugar and orange mixture. Add the baking powder as well. Using a whisk mix everything together until it’s well combined.
3)Third step, wet ingredients
In a separate mixing bowl crack five eggs, pour in the oil and milk and mix, you wanna make sure to whisk this until its smooth. If you prefer a smoother consistency you can strain the mixture through a sieve to remove any lumps.
4)Forth step, mix
after mixing the eggs, oil and milk until smooth you can add the flour mixture to the liquid mixture. Be careful not to overmix the batter. Gently fold the dry ingredients into the wet ingredient until combined.
5)Fifth step, chocolate chips
you can use chocolate chips, chunks, you can even use fruit if you want for this step.
Add as much chocolate as you want to the batter and mix again using a spatula or wooden spoon, just until you see that the chocolate is well distributed everywhere.

6)Sixth step, bake
Spoon the batter into the muffin pan lined with muffin papers filling almost to the top, leavings some space so they don’t overflow. Sprinkle some sugar on top of each muffin, this will add a really nice crunch on top (my favorite part of the muffins).
Now bake the muffins at 410F or 210C for about 13 minutes. After 13 minutes reduce the oven temperature (to make it easier open the oven door for 5 seconds and change the oven temperature to 340 F or 170C.) Bake them for 3 more minutes or until the muffins are fully cooked.
check to see if they are cooked inserting a wooden stick in the middle, if there’s still wet batter cook them for a little longer but if you see the wooden stick coming out clean or with crumbs they are ready to eat. Allow them to cool down for a couple minutes.
7)Seventh step, final results
Enjoy your muffins. You can freeze them in bags and then pop them into the microwave for a couple minutes before eating. I love to eat them with milk but they go perfect with your coffee or tea!
